Die Zeit des super-soften, luftigen, himmlisch weißen Brots aus gebleichtem Weizenmehl, das weder dem Messer noch den Zähnen einen Widerstand entgegen setzt, und das eine nicht enden wollende, dubiose Zutatenliste aufweist, ist endlich vorbei. Wir haben in einem „Natural Health Store“ Roggen-, Dinkel- und Vollkorn Weizenmehl in Bioqualität erstanden, zu unglaublich hohen Preisen. Aber unsere Sehnsucht nach einem schmackhaften, nahrhaften und aromatischen Brot mit knuspriger Kruste ist täglich gewachsen. Nun also kommt in Florida unser „Omnia Backofen“ zum Einsatz und wir freuen uns auf die „Delikatesse“!

Rye bread Florida

The days of super-soft, fluffy, heavenly white bread made from bleached wheat flour that offers no resistance to the knife or teeth and has a never-ending, dubious list of ingredients are finally over. We bought organic rye, spelt and wholemeal wheat flour from a natural health store at incredibly high prices. But our desire for a tasty, nutritious and flavoursome bread with a crispy crust has grown daily. So now in Florida our „Omnia oven“ is being used and we are looking forward to the „delicacy“!

Brotbacken ohne Backofen geht prima im Wohnmobil, einzig die Form des Brots ist ungewöhnlich. Bis ich wieder Sauerteig angesetzt habe, backe ich Langzeit-Roggen-Mischbrot mit Hefe.

Baking bread without an oven is great in the motorhome, the only unusual thing is the shape of the bread. Until I’ve made sourdough again, I bake long-term mixed rye bread with yeast.

Hier ist das Rezept:

Zutaten:

Für den Vorteig:

  • 250 Gramm  Roggenmehl
  • 5  Gramm  Trockenhefe
  • 300 ml  Wasser, kalt

Für das Brühstück:

  • 100 Gramm Gerstenkörner
  • 150 ml  kochendes Wasser

Für den Hauptteig:

  • 150 Gramm  Dinkel- oder Weizenmehl
  • 5 Gramm  Trockenhefe
  • 10 Gramm  Salz
  • 2 TL Brotgewürz (ich nehme gemahlenen Kümmel und Koriander, Bockshornklee habe ich hier noch nicht gefunden)
  • (Je nach Mehlsorte eventuell noch etwas Wasser, damit der Teig geschmeidig bleibt.)

Ingredients:

For the starter dough:

  • 250 grams rye flour
  • 5 grams dry yeast
  • 300 ml water, cold

For the scald:

  • 100 grams of barley grains
  • 150 ml boiling water

For the main dough:

  • 150 grams of spelt or wheat flour
  • 5 grams of dry yeast
  • 10 grams of salt
  • 2 tsp bread spice (I use ground caraway and coriander, I haven’t found fenugreek here yet)
  • (Depending on the type of flour, you may need to add a little water to keep the dough smooth).

Zubereitung:

Den Vorteig und das Brühstück am Abend ansetzen: Das Roggenmehl mit Hefe und Wasser verrühren und zugedeckt 8 bis 10 Stunden ruhen lassen. Die Gerstenkörner mit dem kochenden Wasser überbrühen und ebenfalls über Nacht einweichen lassen. Nach der Ruhezeit alle Zutaten für den Hauptteig mit dem Vorteig und dem Brühstück gut durchkneten, in die gefettete und mit groben Haferflocken bestreute Backform geben und zugedeckt noch etwa 2 Stunden gehen lassen.

Den „Omnia-Backofen“ auf den Gasherd stellen und 20 Minuten auf großer Flamme backen, dann noch 50 Minuten auf kleiner Flamme weiterbacken. Aus der Form stürzen, auskühlen lassen und genießen.

Anmerkung: Zu Hause im Backofen bei 200 Grad gebacken, benötigt das Brot nur 50 Minuten.

Seit zwei Tagen regnet es ohne Pause. Statt Strandspaziergang haben wir den Brotbackduft im Womo genossen. Welch ein Lichtblick!

Prepare the starter dough and the scald in the evening: Mix the rye flour with the yeast and water, cover and leave to rest for 8 to 10 hours. Scald the barley grains with the boiling water and also leave to soak overnight. After the resting time, knead all the ingredients for the main dough well with the pre-dough and the scald, pour into the greased baking tin sprinkled with coarse oat flakes and cover and leave to rise for another 2 hours.

Place the „Omnia oven“ on the gas hob and bake for 20 minutes on high heat, then bake for a further 50 minutes on low heat. Turn out of the tin, leave to cool and enjoy.

Note: Baked at home in the oven at 200 degrees, the bread only needs 50 minutes.

It has been raining non-stop for two days. Instead of a walk on the beach, we enjoyed the smell of baking bread in the camper van. What a ray of hope!
